Total cook time
- 4-4 ounce cod fillets
- 1 tablespoon honey
- 1 teaspoon lime zest (plus juice of one lime)
- 1 tablespoon teaspoon olive oil
- 1/4 teaspoon chipotle chili powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 8-6 inch corn tortillas
- 1 avocado (diced)
- 1 1/3 cups cabbage (shredded)
- pickled jalapeño
- sour cream
- lime wedges
Preheat grill to medium-high (450º-475º). In a medium mixing bowl, add honey, lime zest and juice, olive oil, chipotle chili powder, salt and pepper. Whisk to combine ingredients. Add cod to marinade and let soak for 15 minutes.
Using 2 sheets of heavy-duty aluminum foil (about 14" x 14" in size), fold the edges of each side to create a tray.
Place aluminum foil tray on grill, then add cod fillets. Grill for 3 minutes, then flip and grill for additional 3 minutes. Cod is done when pieces flake easily. Tortillas may be warmed on grill for about 1 minute, if desired.
To assemble tacos, add 2 ounces cod to one tortilla. Top with avocado and cabbage.
