One-Pan Pesto Cod with Parmesan Green Beans
One pan and a half hour is all you need to create this seafood masterpiece. Tender and tasty, cod is perfectly complemented by the flavors in pesto. It’s a simple meal with a big impact that’s also a healthy option.

- 1 lemon (cut into 1/8-inch thick slices)
- 1 lb cod filets
- 12 oz. fresh whole green beans
- 2 tsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- zest of 1 lemon
- 3 Tbs grated parmesan
- 3 Tbs pesto
Preheat oven to 450°. On one side of a rimmed baking sheet, lie lemon slices down and top with cod. Add green beans to the other side of pan and drizzle with olive oil. Season fish and beans with salt and pepper.
Sprinkle parmesan and lemon zest over beans and toss to coat, then spread evenly on pan. Top cod with pesto. Cook in oven for 10-12 minutes, until cod easily flakes. Serve.
