Open Nature® Pork Tenderloin with Greek Lemon Vinaigrette
Mix up the menu this summer by grilling pork tenderloin! Easy and sure to impress, this versatile recipe is the perfect addition to your summer cookout. Simply slice the tenderloin into medallions, grill, then dress with this simple vinaigrette.

- 1 Open Nature® pork tenderloin
- 1 pinch kosher salt
- 1 pinch black pepper
- 2 tablespoons olive oil
- 8 bamboo skewers
- 1/2 tablespoon dried oregano
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 tablespoon minced garlic
Prepare the skewers, cut the pork tenderloin into 2-inch wide sections.
Use two skewers parallel to each other, skewer 3 pieces of tenderloin per pair of skewers with the cut side exposed.
Prepare a medium hot grill
Season pork with salt and pepper, then coat with oil.
Spray grill surface with non-stick spray.
Grill pork for 5-6 minutes per side, then brush the vinaigrette over the skewers 2 minutes prior to removing from grill.
Cook to 150˚ internal temperature, then remove and allow to rest 3-4 minutes before serving.
