Pumpkin Spice Ice Cream
Our healthy spin on ice cream is a must try! Pumpkin Spice Ice Cream is made with just bananas, pumpkin puree and pumpkin spice. Add cinnamon and honey if you want another dash of flavor. Fast and flavorful, the taste and consistency of this sweet dessert is a perfect ice cream substitute.
Total cook time
- 2 large ripe bananas (frozen into chunks)
- 1/2 cup canned pumpkin puree (frozen into cubes (see directions below))
- 1 1/2 teaspoons pumpkin spice or ground cinnamon
- a squirt of honey (optional)
Let the frozen pumpkin cubes thaw just a bit before using. In the food processor or high-powered blender, put frozen bananas, pumpkin puree ice cubes, and pumpkin pie spice.
Pulse over and over until an "ice cream" consistency forms (it's important that you only "pulse" the food processor - do not turn it fully on). Mixture will break up, and then slowly become an ice cream consistency. Add a squirt of honey to the mixture if you like it a little sweeter (depending on the sweetness of your banana). Scoop and serve immediately!
