Instructions

• STEP 1

  Preheat oven to 425°F.

• STEP 2

  Place sausages on a baking sheet pan and place in the oven (it doesn't have to be fully heated); bake for 10 minutes.

  • 3 pork sausages

• STEP 3

  Meanwhile, peel and mince the garlic; place in a medium bowl along with the oil and spices. Stir to combine.

  • 2 cloves garlic
  • 2 tbsp extra virgin olive oil
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

• STEP 4

  Wash and dry the fresh produce.

  • 1 medium zucchini squash
  • 1 cap portobello mushroom
  • 1 small bunch asparagus

• STEP 5

  Trim and slice zucchini into ¼-inch rounds; place in the bowl with the garlic oil.

• STEP 6

  Cut the mushroom in half and then crosswise into thin strips; add to the bowl.

• STEP 7

  Snap (or cut) off woody ends from the asparagus and cut into 2-inch pieces; add to the bowl with the other veggies and toss to combine.

• STEP 8

  Remove baking sheet pan from the oven, flip sausages, and push them to one side. Add veggies to the pan and return to the oven; continue to bake, until veggies are tender and sausages are cooked through, about 15 minutes.

• STEP 9

  Slice sausages into 1-inch pieces.

• STEP 10

  To serve, divide sausage pieces and vegetables between plates. Enjoy!
